“All In The Pan” Creamy Mushroom Chicken

This meal is a crowd pleaser, from children to grandparents, there are few who can resist this creamy chicken dinner. The best part is that it is done all in one pan which takes out all the fuss and minimises on washing up. No need to make a side dish, it’s all there in the pan.
4 large chicken breasts, skin on, sliced in half
1 brown onion, thinly sliced
2 cloves garlic, finely chopped
4-6 sprigs of thyme (or rosemary, or both)
300g button mushrooms, sliced
1 cup wine
hot water from a kettle
1-2 tsps mustard (I used hot english, but dijon or seeded will do)
olive oil, salt, pepper
1 large bag spinach leaves
100ml cream
Season your chicken with salt and pepper then fry in a hot pan with a little olive oil until the outside is slightly golden. You might have to do this in a couple of batches. Set aside the browned chicken on a plate.

In the same pan, add a little more oil if necessary, then dump in the mushrooms, onions, garlic and thyme. Stir around a little initially, then let everything get all nice and golden brown, stirring occasionally, but not too frequently.

When everything is as brown as you’d like it, nestle in the reserved chicken breasts,  and any liquid that has collected on the plate, along with the mustard, the cup of white wine and enough water to come half way up the breasts.

Turn down the heat to low/med and simmer for 20 minutes until the liquid has reduced by three quarters and the chicken is cooked.
Remove the chicken to the same plate as before. Now add the cream, stirring through and bubbling for a minute or two until the sauce is thick and creamy. Check for seasoning (add salt and pepper to taste.)

Pop in the spinach leaves and wilt for a minute.

Add the chicken back to the pan and serve.

    SO SO good. I made this last night and both dh and I adored it, kids having leftovers tonight (tho I was so tempted to eat them!) Just divine.
